					<description><![CDATA[Hey Leah!  This looks amazing.  My husband and I have tried to recreate the roasted salsa they serve at Uncle Julios (Rio Grande) in Northern VA....I usually use the liquid left in the pan to scrape up the burned bits that get stuck to it.  Maybe we&#039;re roasting it too long LOL  You&#039;ve inspired me to try again...it&#039;s worth the effort :) -kristiina

Roasting brings out a deep, smokey flavor in the tomatoes and other vegetables that goes so perfectly with the heat of salsa. I think you&#039;ll be very pleased with the results.
