Hi Deanna--thanks for your question. This book uses a mild refrigerator starter since it is so much less work than sourdough starter. Apparently it is possible to sour it based on how you feed it but that is for the more advanced bread maker and that&#039;s certainly not me. LOL! Have a great day!
